Banana and Choc Chip Loaf


We love bananas in our house as they are so versatile; chopped up on breakfast, in pancake recipes, smoothies, muffins, etc. The Banana & Choc Chip Loaf below is really easy to make and it is so moist.


Ingredients

2 eggs

1/3 cup olive oil

1/4 cup maple syrup or honey

11/2 cup Greek yoghurt

1 tsp vanilla

2 mashed bananas

1 cup white plain flour

3/4 cup wholemeal plain flour

1 tsp cinnamon

1 tsp baking soda

pinch salt

1/2 cup chopped walnuts

3/4 cup Choc Chips

Method

​Crack eggs into a bowl and whisk with olive oil, maple syrup, yoghurt, vanilla and mashed banana. In another bowl, whisk the flours, cinnamon, baking soda & salt. Pour the wet ingredients into the dry ingredients and mix gently. Fold through walnuts and 1/2 cup of the chocolate chips. Grease and line a loaf tin with baking paper, pour in batter, sprinkle with extra choc chips, cinnamon & raw sugar, and bake at 180 degrees C for 45 minutes or until a skewer comes out clean.
