Chunky Choc Biscuits

My daughter has made this recipe up by combining various other recipes until she was happy with the finished product.  It originally had almost double the sugar, but I made her cut it back (I am such a mean mother sometimes), as they are already very sweet.

 

 

 

Chunky Choc Biscuits

 

115g softened butter

50g castor sugar

50g brown sugar

140g plain flour

1 tsp vanilla

1/2 tsp bicarb soda

pinch salt

3/4 cup dark choc chips

1/2 cup rolled oats

1/2 cup craisins

 

Beat the butter with both sugars in a mixing bowl until creamy, then add vanilla and mix.  Stir in flour, salt and bicarb soda.  Mix well.  Add chocolate chips, rolled oats and craisins.  Stir through, then spoon out tablespoons of mixture onto a lined tray (leaving quite a bit of space between each biscuit).  Bake at 180 degrees for 10-12 minutes.  Allow to cool on the tray.  Makes approx. 15-18 biscuits.

 

Note: Feel free to add anything else to this recipe. I can't guarantee they will come out looking exactly like the photo as we are always experimenting with the ingreidents.  However, I do encourage people to use their own intuition when cooking. If the biscuits don't turn out exactly how you had planned, at least you still get to lick the bowl and make another batch until you reach your desired perfection.  Although I eat relatively sugar free these days, sometimes a biscuit like this is just what you need on a cold afternoon with a cup of tea.
