Inspired by the delightful students at Murrumbeena Primary School, these bliss balls are a super easy snack, perfect for No Packet November. The recipe below only makes around 8 balls, as I always like to test a recipe on my kids first in case they don't like it (I hate seeing good food go to waste). However, I suggest making double as out of 150 students, only a handful weren't so keen. Everyone else LOVED them!
8 dates, chopped (I often use a combination of dried and medjool dates)
2 tablespoons rolled oats
2 tablespoons mixed seeds or nuts (pepitas, sunflower seeds, almonds, walnuts)
1 tsp cacao powder
1 tsp coconut oil
1 tsp maple syrup
Soak dates in a little boiling water (unless they are medjool dates), add all ingredients in a food processor, mix and then form into small balls. Roll in coconut if you like and refrigerate. Makes approx 8 balls.
