One bowl, less than 10 ingredients (including zucchini) and the kids don't even know it's in there. These are so delicious, perfect for that lunchbox or after school snack and freeze really well too.
Choc Zucchini Slice
1/2 cup Extra Virgin Olive oil
1/4 cup maple syrup (or you can use sugar)
1 tsp Vanilla
1/2 cup Cacao Powder
1 cup Plain Flour
1 tsp Baking Powder
1 1/2 cups grated zucchini
Whisk oil, maple syrup, vanilla and eggs. Add cacao powder, flour, baking powder and grated zucchini. Stir until well combined. Add a handful or chopped walnuts if desired. Spread into a lined and greased baking tray (or silicone tray) and bake at 160 degrees C for 25-40 minutes or until a skewer comes out almost clean (I really like them to be gooey in the centre, so take them out after 25-30 minutes). Eat them warm or wait until they cool, if preferred.
Note: I started using white flour in this recipe, and over time have mixed it with some wholemeal flour or wholemeal spelt flour just to make them a little healthier. Enjoy!
