These super easy one bowl cookies are a great lunchbox or afternoon snack. I have used maple syrup for sweetness, along with the dark chocolate, so they are not loaded with refined sugar like most choc chip cookies. Also, with the addition of extra nutrition in the form of wholemeal spelt flour, oats and LSA mix, these cookies provide a healthier alternative, but are still very popular with kids and adults. If you have a nut-free household or school, remove the nuts and LSA, and replace with more rolled oats, or dried fruit.
Salted Peanut & Choc Chip Cookies
125g butter, melted
2 tblsp maple syrup
1 cup wholemeal spelt flour
1/2 cup self raising flour
1 cup rolled oats
1 tblsp LSA mix (Linseeds, Sunflower Seeds & Almonds)
1/2 cup salted peanuts, roughly chopped
3/4 cup dark choc chips
Melt butter, add maple syrup and egg, stir well. Add flours, oats, LSA, peanuts and choc chips. Mix well. Roll into small balls and place onto a lined baking tray.
Bake at 170 degrees C for 12-15 minutes, until slightly brown on top.
Makes 25-30 small cookies. Enjoy!
