What are you like at poaching an egg? I wasn't too good until a few years ago, but now I've got it figured out and can guarantee perfect gooey eggs each time.
Fill a medium saucepan with water and bring to the boil
Add a splash of vinegar
Crack an egg onto a saucer
Use a large spoon to stir the water and make a whirlpool
Gently tip the egg into the water and continue to stir for a few seconds
Set the timer for 3 minutes and continue to simmer the egg
After 3 minutes, gently remove and drain on paper towel
Serve with sauteed veg, bacon, avocado, rocket and feta on sourdough.
Note: If the eggs are very large and/or have been in the refrigerator, they make take around 4 minutes to poach.
