I have an abundance of oranges at the moment so why not put them to good use. This recipe is great because it only has 7 ingredients and apart from boiling the oranges for an hour, it is really easy to make. It is also gluten free and sugar free, using honey for some added sweetness.
Orange, Almond & Chia Cake
1 tsp vanilla
1/4 cup honey
2 cups almond meal
1 tsp baking powder
2 tablespoons chia seeds
1. Boil the oranges for 1 hour, allow to cool slightly.
2. Roughly chop oranges, puree in a food processor, add eggs, vanilla and honey, mix well.
3. Add almond meal and baking powder, blitz again, then fold through chia seeds.
4. Pour into a greased and lined 18-20cm round cake tin and bake for 45 mins at 160 degrees C.
Serve warm or cold with greek yoghurt or marscapone cheese. Enjoy!
