Muesli bars can be a handy snack, but they can be expensive to buy, and are often full of rubbish...not to mention all of the individual packaging.
This recipe is incredibly easy, requires no baking, and only costs $8.20 to make the whole slice, or 82 cents per bar. The packaged variety cost between 25c to $1 per bar depending on the brand. The ingredients list on some of these packages can be very long and you are never really sure what you are eating. I would prefer a home-made option with only 5 ingredients.
Almond Muesli Bars
1 cup medjool dates (pitted)
1 cup almonds (dry roasted are great)
1 1/2 cups rolled oats
1/4 cup honey
1/4 cup peanut butter
-add some chia seeds, sesame seeds, dried fruit or even chocolate chips
Place dates in a food processor and blitz until sticky. Add almonds and pulse until roughly chopped. Melt peanut butter and honey in a large bowl and mix well. Then tip in date and almond mix, and rolled oats. Combine well, and transfer to a slice container. Press down well to compact the slice, and freeze. I like to eat it straight from the freezer. Cut into 10 muesli bars and enjoy.
