Berry easy muffins

Muffins can sometimes be complicated, but these ones are so easy that kids can make them without any help.  I have tried a few different combinations, and my top picks so far are Raspberry & White Chocolate, followed by Blueberry, Lemon & White Chocolate.

 

Stay tuned for other variations to come, including different flours, fruits and reducing the sugar content.  I also love nuts, so will no doubt be adding these to the recipe.

 

Easy Berry Muffins

 

2 cups self-raising flour

1/2 cup caster sugar

3/4 cup milk

1/2 cup oil

1 tsp vanilla essence

2 eggs

1 cup white choc chips

1 cup frozen or fresh raspberries or blueberries

zest and juice of 1 lemon if using blueberries

 

Preheat oven to 180degC. Lightly grease a 24 mini-muffin tray.

 

Mix flour and sugar in a medium sized bowl, make a well in the centre.

 

In a separate bowl, whisk milk, oil, vanilla and eggs.  Pour into well of flour/sugar and mix gently with a wooden spoon.  

 

Add choc chips, berries and lemon zest/juice (if using).  Gently mix together.

 

Spoon into mini-muffin tin (larger muffin trays can be used but the mini-muffin is the perfect size for a lunch box treat, or great with a cup of tea).

 

Bake for 12 minutes or until ready when tested with a skewer.  Makes 24.
