Birthdays are for celebrating

I created Tasting Fitness to promote healthy eating and exercise.  I want to share my recipes and exercise tips with you, and motivate you to take control of what you eat and how often you exercise.


I also want to point out that although I love healthy, fresh food, I also love eating cake. The carrot cake with cream cheese frosting (pictured) was made by my gorgeous children for my birthday today.  It is certainly not healthy, but I think we all deserve to indulge and enjoy life every so often.


Here is my first recipe.  Like I said, it's not healthy, but an easy cake that everyone loves and anyone can make. Enjoy!


Carrot Cake


1 cup extra virgin olive oil

3 eggs

1 cup sugar

1 1/2 cups plain flour

1 1/2 teaspoons baking powder

1 teaspoon bicarb soda

2 teaspoons ground cinnamon

pinch salt

2 cups grated carrot

3/4 cup chopped walnuts


Beat oil, eggs and sugar for about 5 minutes with an electric mixer.  Sift dry ingredients and add to mixture slowly.  Mix well for 1 minute.  Fold in carrot and walnuts.  Place mixture into a greased and floured round cake tin (approx 20cm).  Bake in a slow oven at 150 degrees C (300 deg F) for 1 hour or until ready when tested with a skewer.  When cool, cut in half and spread a thin layer of icing in the middle, put top of cake back on and spread remainder of icing over the top and down the sides of the cake.  Decorate with walnuts.  Refrigerate for at least 2 hours before serving.


Cream Cheese Frosting


125g cream cheese

1 1/2 cups icing sugar

2 teaspoons butter

1 teaspoon vanilla essence


Mix all ingredients with the electric beater until smooth and easily spreadable.
